Apple Cake with Caramel Sauce
This recipe comes from Gwen Orton, who lives across the street from my mom. We had it once at a relief society thing I think. Hope everyone enjoys it for fall!
Apple Cake with Carmel Sauce
1/2 cup margarine
2 eggs
2 cups flour
1 tsp. soda
2 Tbl. lemon juice
5 cups apples (peeled and chopped)
2 cups sugar
2 tsp. cinnamon
1/2 tsp. salt
1/4 cup milk
2 tsp. vanilla
Cream margarine and sugar together. (I used a pastry cutter that you just do by hand.) Add other ingredients and mix well. Batter will be stiff. Pour into greased 9x13 glass pan and bake at 350 degrees for 30 min. (Mine was still a little soggy in the middle after 30 min, so it could have been baked longer, but we left it soggy on purpose because it was like this delicious pudding-type cake.)
SAUCE
2 1/2 cups of water
3 Tbl. corn starch mixed with a little water
1 1/2 tsp. lemon juice
2 cups brown sugar
2 tsp. vanilla
1 cube magarine
Melt margarine in sauce pan over medium heat. Add sugar. Cook a few minutes. Add water. When it boils, add cornstarch. Stir until sauce thickens a bit. Take off heat and add lemon juice and vanilla. (NOTE: this makes TONS of sauce for this cake. We poured the sauce over the whole cake making a nice, sticky, gooey, carmel-y, mess that was really yummy. You could also just spoon the sauce over individual pieces of cake.)
Top with whipped cream or Cool Whip if desired. (I bet vanilla ice cream would also be delish!)
